Calamin is one of only two Grand Cru appellations in Switzerland, and this bottle from Stéphane Porchet shows exactly why. Pour it for a friend who thinks Chasselas is just an easy-drinking wine, and watch them change their mind.
Almonds and yellow fruit open the nose, then a gentle bitterness creeps in, the kind that makes you want another sip. On the palate, fresh acidity meets a stony, mineral edge, both held in perfect balance. The finish rounds out generous and long.
This calls for perch fillets straight from Lake Geneva, or a simple raclette if you're staying local. Serve it chilled, around 10 to 12 degrees, and let it sit in the glass for a few minutes before that first sip.
