Pascal Jolivet's cellar knows the Loire like few others, and this Pouilly Fumé shows why his name carries weight among sauvignon blanc lovers. Pour this one when you want a white that speaks of the river itself, not just the grape.
In the glass, freshly cut grass and a flinty, almost smoky mineral note take the lead, carved straight from the limestone soils above the Loire. The palate sits between dry and slightly fleshy, with a richness that keeps the acidity in check rather than letting it bite. The finish is long and precise, cutting clean to the very end.
Open it with oysters or scallops, or let it sit alongside a warm goat cheese salad where the wine's cut grass notes meet the cheese's tang. Serve it slightly chilled, around 10 to 12 degrees, to let that mineral edge shine.
