CompleterSwitzerland's rare alpine treasure with honey-sweet elegance and remarkable aging potential.
Completer is an extraordinarily rare white grape variety native to the Graubünden canton in eastern Switzerland, specifically the Herrschaft region. This ancient variety nearly disappeared in the 20th century, with only a handful of vines surviving in old vineyards. The name "Completer" comes from the Latin "completorium," referring to the final evening prayer service, as this grape was traditionally used to make wine for religious ceremonies.
What makes Completer truly special is its late-ripening nature and ability to hang on the vine well into autumn, developing exceptional sugar concentration while maintaining acidity. Today, fewer than 10 producers cultivate this grape on roughly 4 hectares of vineyard, making it one of the rarest commercial wine grapes in the world. Its revival is a testament to Switzerland's commitment to preserving indigenous varieties.
How to recognize this grape variety?
Completer produces rich, full-bodied wines with a stunning golden-yellow color that deepens with age. The aromatic profile is captivating, featuring intense notes of honey, ripe apricots, quince, and dried herbs, often complemented by floral hints of acacia and chamomile. On the palate, expect a luxurious texture with flavors of candied citrus peel, beeswax, nuts, and stone fruits, balanced by surprisingly vibrant acidity that prevents the wine from feeling heavy despite its richness.
These wines pair beautifully with Alpine cuisine—think aged Gruyère or Sbrinz cheese, veal with cream sauce, or roasted poultry with mushrooms. The wine's complexity also makes it excellent with foie gras, spicy Asian dishes, or simply enjoyed on its own as a meditation wine. Completer has remarkable aging potential, developing tertiary notes of caramel and dried fruits over decades.
