There are actually three distinct Torrontés varieties: Torrontés Riojano (the most widely planted and highest quality), Torrontés Sanjuanino, and Torrontés Mendocino. The Cafayate region in Salta province, with vineyards reaching over 5,000 feet elevation, produces the most acclaimed expressions. The intense sunlight, cool nights, and dramatic temperature swings of these high-altitude sites create wines with exceptional aromatics while maintaining refreshing acidity.
