Cave des Promesses

Julien Fournier founded Cave des Promesses in 2018, and the name itself tells a touching story. As a young boy working in the family vineyard in Martigny-Croix, he made a promise to his father and godfather that he would become a winemaker one day. That childhood promise became the foundation of his cellar. After completing his training at Changins and working at Cave le Banneret and Régence Balavaud, Julien launched his own venture with the support of 160 investors who believed in his vision, raising 230,000 Swiss francs through crowdfunding. The winery is based in Conthey, right in the heart of Valais, where the Mediterranean climate and terraced vineyards create ideal conditions for quality viticulture.

The Vineyards and Terroir

What sets Cave des Promesses apart is the diversity of its vineyard sources. Julien works with around 15 hectares spread across five different communes: from Martigny-Croix to Saint-Léonard, passing through Charrat, Chamoson, and Conthey. Each site brings its own character to the wines. The Chamoson vineyards sit on a massive alluvial cone descending from the Haut-de-Cry chain, offering varied soils perfect for multiple grape varieties. Conthey's 380 hectares of vines range from 468 meters in the plain to nearly 950 meters in Aven, creating diverse microclimates on schist soils with limestone dominance. The family estate at Plan-Cerisier in Martigny-Croix, where it all began, was completely replanted in 2015 with Savagnin Blanc and Gamaret on young, schistose soils. This mosaic of terroirs allows Julien to match each grape variety to its ideal location, working closely with trusted growers who share his commitment to quality.

Winemaking Philosophy

Julien's approach is straightforward: produce great grapes to make great wines. While he doesn't chase organic certifications, his viticulture is thoughtful and environmentally conscious. Controlled yields, optimal ripeness, impeccable vineyard care, and a deep understanding of each terroir guide his work. In the cellar, the philosophy is equally clear: respect the raw material. This means letting the grapes express themselves without unnecessary intervention. The winemaking is precise and careful, focusing on showcasing the unique characteristics of each site and vintage. Julien's experience working with top Valais producers gave him invaluable knowledge of the region's terroirs, which he now applies to his own wines. His first vintage in 2018 produced 40,000 bottles, and by 2021 he had reached a steady production of 75,000 bottles annually.

The Wine Range

Cave des Promesses produces twelve wines: five whites, five reds, one rosé, and a special cuvée called Promesse d'Exception that reflects each vintage. The Fendant Conthey Grand Cru is the cellar's calling card, with the 2020 vintage winning gold at the Mondial du Chasselas. The Johannisberg Chamoson Grand Cru and Syrah Chamoson Grand Cru undergo rigorous controls to earn their Grand Cru labeling. Other whites include the Petite Arvine Promesse de Plaisir with its saline, explosive character, and the Savagnin Blanc Promesse d'Exotisme. The red lineup features Pinot Noir Promesse d'Élégance, Gamay Promesse de Convivialité, Merlot Promesse de Caractère, and blends like Promesse d'Harmonie. Each wine name reflects its personality, from the approachable aperitif-style Fendant to age-worthy Syrah. The range offers something for every occasion and taste, all crafted with the same attention to detail and respect for terroir.
