This is the bottle you save for the evening when the conversation matters as much as the meal. Domaine Michel Noëllat has tended these 35 hectares of Echézeaux for generations, and this 2022 shows why growers fight over a few rows here.
The soil is a mix of marl and pebbles, with some plots climbing past 300 metres, and you can taste that mineral backbone right from the first sip. Dense, firm tannins wrap around dark cherry and a whisper of forest floor, the kind of structure that needs patience to unfold. Give it time in the glass and it rewards you with layers you wouldn't expect from pinot noir.
Pour this with venison or a tournedos rossini, where richness meets tannin head on, or let it sit alongside a risotto with porcini mushrooms. Decant it for at least an hour before serving, and let it breathe at room temperature, around 16 to 18°C.
