About this wine
Some bottles you save for a Tuesday, others you save for the day someone finally understands why Burgundy costs what it does. Les Suchots is that second kind, the parcel everyone in the village quietly hopes will one day wear a Grand Cru label.
In the glass it moves fast: dark cherry and crushed rose petal up front, then something earthier, a whisper of forest floor and clove, tightening into fine, chalky tannins that just won't let go. Michel Noëllat has a light hand here, letting the site do the talking rather than the winemaking.
Pour it alongside roasted pigeon or a good coq au vin, let it breathe for an hour before you sit down to eat, and serve it around 17°C.
