About this wine
Domaine de Bila-Haut, in Collioure, is where Michel Chapoutier lets grenache noir and mourvèdre talk to each other right by the Mediterranean, and this bottle shows exactly why that spot matters. Pour it for someone who thinks they already know grenache, and watch them reconsider.
The nose opens on blackberries, blueberries and graphite, then turns toward spice and violet as it breathes. In the mouth it's full and fresh, with tannins so silky you barely notice them, before the finish turns salty, with a touch of iodine that lingers on and on.
Pour it alongside rack of lamb or venison, and let a wedge of aged parmesan close the meal. Decant it for an hour before serving, at room temperature, around 16 to 18°C.
