About this wine
Pour a glass of this Oeil de Perdrix when the sun's still out and you just want something easy to sip with friends. Cave Champ de Clos, up in the northern Vaud, built this rosé from pure Pinot Noir, and it shows in every drop.
In the glass, it's a bright, almost luminous pink. The wine carries ripe red fruit and a quiet mineral touch from the terroir, then finishes light and lively, with a small streak of acidity that keeps you reaching for the next sip.
Pour it slightly chilled, around 10 to 12 degrees, alongside grilled shrimp, a fresh poke bowl or simply seared salmon.
