This underappreciated variety thrives in hot, dry climates where it develops concentrated flavors while maintaining surprising freshness. It's often blended with other Rhône varieties but increasingly appears as a single-varietal wine, especially from adventurous winemakers in southern France. The grape's ability to produce rich, textured wines with moderate acidity makes it a fascinating alternative to more common white varieties.

Despite its name suggesting a gray color, the grape's skin is actually a beautiful pink-copper hue, which can impart a subtle golden tint to the finished wine when handled with care.
