About this wine
Completer is one of those grapes almost nobody grows anymore, so when a cellar like La Rodeline still bottles it in Valais, you pay attention. This is the kind of wine you open on a quiet evening when you want to show a friend something they've never tasted before.
In the glass, it shows a pale yellow-green hue. The nose opens on mirabelle plum and citrus, with a streak of lime running through it. On the palate it's concentrated, the attack fruity, and the acidity stays fresh and almost tender rather than sharp, sitting in fine balance with the alcohol.
Pour it with scallops or langoustines, and the sweetness of the shellfish will answer that acidity nicely; turbot works just as well if you want something more substantial. Serve it slightly chilled, around 10 to 12 degrees.
