Laurent Berthet doesn't make much Doral, and that's exactly why this bottle deserves a closer look. Grown on the Lavaux terraces above the lake, this grand cru shows what this rare grape can do when the vines get real Swiss sunshine.

In the glass, the pale gold color already hints at the ripe fruit waiting inside. The nose opens on mirabelle plum, fig and pineapple, then turns toward bergamot and fresh butter, with a whisper of milk chocolate underneath. On the palate it starts soft, builds into something fuller, and a fine streak of acidity carries the fruity, spicy, oaky flavors through a long finish.

Pour it with scallops or goat cheese, or simply set it out with appetizers before the main course. Serve it slightly chilled, around 10 to 12 degrees, so that acidity stays crisp.
