About this wine
When the nights turn cold and you want a red that fills the whole room with its presence, Cornas Temenos is the bottle to reach for. This is Chapoutier at its most serious, grown on the steep granite slopes of Cornas, made entirely from Syrah.
The colour is almost black, with violet edges that hint at what's coming. On the nose, graphite and black fruit jelly mix with bay leaf, cedar wood and a touch of fig leaf. In the mouth it opens full and round, the tannins velvety, with a finish built on spice and smoky notes that never loses its freshness.
Pour this alongside game meats or a slow-cooked venison, and it holds its own just as well next to a beef fillet. Decant it for at least an hour before serving, at 16 to 18°C.
