When you want a red that doesn't whisper but speaks plainly, pour this syrah from Thierry Constantin's cellar in the Valais. The 2024 is built for someone who likes their wine with backbone, not just charm.
Cassis and violet open first, then clove and black pepper push through, giving it a spicy snap. On the palate it's massive and firm, yet the acidity keeps it fresh rather than heavy, showing syrah in its truest form, no polish to hide the grape.
Pour it next to braised beef cheeks or a wild boar stew, where the pepper notes meet the richness of the sauce, or try it with a grilled steak if you want something more direct. Decant it for an hour before serving and keep it around 17°C so the fruit stays in focus.
