Cornalin is the grape valais winemakers are proudest of, and Thierry Constantin's Aguares shows exactly why. This is a bottle for patience: tuck it away for a few years, or open it tonight if you're in the mood for something with real backbone.
In the glass, dark cherry sits alongside a touch of roasted coffee bean, the kind of toasted note that comes from careful work in the cellar. The structure is firm, the tannins still a bit youthful, and underneath it all runs a thread of minerality that keeps things fresh.
Pour it with a beef fillet or a saddle of red deer, and let it breathe in a decanter for at least an hour before serving at 16 to 18 degrees.
